Cherdels are Dobrogen pies with salty cheese, onion and dill. They are delicious and easy to prepare.
For the flour:
– 1 kg of flour
– 1 grated teaspoon of salt
– 25 g of fresh yeast or 7 g of dry yeast
– 550-600 ml of water
– 1 kg telemea lamb or goat cheese
– 4-6 eggs
– 1 bunch dill
– 1 bunch of green onions
– 1 pinch of fresh ground pepper
For spread over
– 2 eggs
– 250 g yogurt or cream
How is it prepared
It’s best to use a mildly salty sheep or goat cheese, but cow’s cheese also works. Grate or grind the cheese by hand, add dill and green onions, finely chopped and freshly ground pepper. Don’t add too many eggs, just to soften the cheese, but not to make it runny, writes pofta-buna.com.
Divide the dough into 4-5 pieces, depending on how many sheets you want to make. The table can be sprinkled with flour and rolled with a rolling pin. The paper should not be thin. Each piece of dough is kneaded with oiled hands and left on the table for 10 minutes to rest. Then, a rectangular sheet is drawn. Be careful! The table should be well oiled.
Add as much salty cheese filling as possible, then roll up. Place in a pan greased with butter/oil or lined with baking paper. The other pieces of dough are made in the same way. In the end, when everything is in the tray, pieces are cut, exactly the size of one part.
The bread is made in a heated oven, at a temperature of 170 degrees, a hot burner for an electric oven, a hot burner for a gas oven. Don’t spread anything on the bread yet. When it is brown and almost ready, remove the bread and pour a mixture of yogurt and eggs on top. You can also use cream, or fat and sour yogurt to give that special taste. Leave in the oven for another 10 minutes, until the eggs and yogurt are combined.
Remove from the oven, cover with a towel and let steam for 15 minutes. With a spoon, remove the cherdels from the tray.
EGO: German cake filled with cherries and cream. Best idea for the weekend. It’s exciting!
300 g flour
1 tablespoon powder
1 teaspoon of sodium bicarbonate
120 g of sugar
120 g of butter
a pinch of salt
200 g cream
150 g of yogurt
70 g of sugar
40 g of starch
2 tablespoons of lemon juice
600 g sour cherries
250 ml of water
40 g of starch
How is it prepared
Mix cherries (if they are fresh, pitted, if they are from compote, and all the juice and leave the water), and water and a little cinnamon. Put the food on medium heat, and when the composition is hot, separate 2-3 tablespoons of juice and combine them with starch. Add the dissolved starch to the fruit and mix until you get a fruit sauce.
While the sauce is cooling, prepare the top. Mix the flour with baking powder, sugar, salt and bicarbonate. Add the butter as cold as possible, two eggs and the vanilla, continuing to mix until you get a dough. Use your fingers to spread 2/3 of the dough into a cake pan lined with baking paper and lift it up the sides of the pan. Add another 2 tablespoons of flour to the rest of the ingredients and press it with a fork to get crumbs from the mixture.
Mix yogurt and cream, lemon juice, vanilla essence, starch, eggs and sugar. Homogenize the mixture.
How to assemble cherry pie
Place the cherry sauce on the spread on the tray, spread the cream on top, sprinkle the dough crumbs on top of the cream as much as possible. Bake German bread with cherries and cream for 45-50 minutes at 180 degrees.
