Plum compote Recipe:
- 5 kg of plums;
- 1 kg of sugar;
- 3 liters of water;
- flavors as desired – you can use cinnamon, vanilla, anise, cardamom wood or cloves;

In order for plums to remain healthy during vaccination, a needle or measuring scale should be used to measure the length of the stem.
Divide the number of plums as much as possible between the pots prepared for the compote. You can fill these jars with fruits, or you can add small fruits, then add sugar syrup.
How to prepare syrup for compote
In a jar full of fruits prepared for storage, pour clean water until the jar is full. Then, pour the water into the prepared glass and measure the amount of liquid that fits into the jar.
In water calculated as necessary, add sugar – 330 gr. and a liter of water – but here everything can vary according to taste, this will not affect the power from the point of view of sterilization. It is not sugar that makes the compote good in the winter, but it is clean, sterilized, the pot is strong and covered.
Boil the water and added sugar, when it boils, let it boil for about 5 minutes, at this time, it can be puffed on top if you want – puffing is not mandatory.
Turn off the heat and let the sugar syrup cool a little.
Preparation of Compote
Place the hardened jars on a metal tray. Metal is a good conductor of heat, it will receive the heat provided by the hot syrup, preventing the glass of the bag from being damaged.
Yet heat the sugar syrup, fill the jars, then seal them hermetically. You can use a sterilized cover or cellophane to put it in water and tie it to the neck of the pot with a string.
Then put the compote in a cold oven and grill. Turn off the oven and heat it to 120°C. Once it is hot, leave it for another 20 minutes, turn off the oven and leave the plum compote inside to cool slowly.
