Recipe for raspberry cake

For the dough, mix the flour and butter until it becomes a mixture. Add water and mix until the dough starts to come together.

Divide the dough into two balls, wrap the halves in cling film and refrigerate for an hour. Put the raspberries in a bowl, combine with 5 tablespoons of sugar and 2 tablespoons of tapioca flour or corn starch and one tablespoon of lemon juice.

The oven is preheated to 200 degrees. Take one of the two dough balls in the fridge and roll it. This process is done as quickly as possible, because the dough is easier to work with when it is cold.

The stretched dough is placed in a tart pan covered with baking paper and greased with butter. Scrape off the sides that fall over the pan, leaving only a 2 cm margin.

Turn the fruit into the tray and cover it with another sheet of paper. The side of the upper sheet will be “hemmed” under the edge of the dough, holding the thumb under the dough and pressing, from one side to the other, with the fingers and the fingers of the other hand. However, if it seems difficult, you can cut the dough into pieces and create a ridge on the fruit.

Wash it with egg yolk and a spoonful of milk, sprinkle powdered sugar on top and mix in a few places. Leave it in the oven for about an hour, until browned, then let it cool for another hour, at least. The raspberry cake can be served plain, garnished with fruit or topped with a dollop of ice cream.
