Baked aubergine bread can be served as a side dish or as a side dish to pack a punch. It is easy to prepare and is a delicious version of the classic eggplant salad.

  • 100 grams of parmesan
  • 100 grams of breadcrumbs
  • 2 eggs
  • 50 butter
  • 50 ml oil
  • optional 2 teaspoons turmeric

  • pepper

Baked Eggplant Recipe

First, we will dry the eggplants, clean them and put them in a plastic colander, so that all the juice flows. We will cut a small eggplant, after that we will take care of the rest.

Finely chop the onion and heat the butter and oil, then add the onion to the frying pan. When it starts to turn purple, we will add the eggplant and leave them on low heat for about 5-10 minutes.

After leaving them at a low temperature, we will turn off the heat and let the mixture cool. We heat the oven to 180 degrees and we will take care of the mixture when it stops.

We will add the two eggs to the eggplant mixture, and we will add grated parmesan, as well as bread and garlic. Depending on your taste, we add salt as we want, but also pepper, and if you want a special taste, then you can also add turmeric. We will mix all the ingredients well.

We apply honey and cover it with bread, after that we pour the composition that is shaped like a shell into the tray. We will put the tray in the oven for 30 minutes, after that we can serve eggplant bread both cold and hot.
